One of my favourite things to do when cleaning out the fridge is taking those “on the edge” veggies, popping them onto a sheet pan with a drizzle of olive oil, S&P and roasting it for sauce that’s out-of-this-world bursting with flavour.
Try experimenting with different spice blends, your own or add Roasted Red Pepper and Garlic, or (my latest discovery) Kirkland's Organic No Salt Seasoning - the sky's the limit!
Going low carb? This sauce works beautifully with spaghetti squash.
This sauce also freezes well so you can give those veggies and second (third, fourth?) life.
