Roasted Veggie Pasta Sauce

One of my favourite things to do when cleaning out the fridge is taking those “on the edge” veggies, popping them onto a sheet pan with a drizzle of olive oil, S&P and roasting it for sauce that’s out-of-this-world bursting with flavour.

Try experimenting with different spice blends, your own or add Roasted Red Pepper and Garlic, or (my latest discovery) Kirkland's Organic No Salt Seasoning - the sky's the limit!

Going low carb? This sauce works beautifully with spaghetti squash.

This sauce also freezes well so you can give those veggies and second (third, fourth?) life.

Roasted Veggie Pasta Sauce

A super simple, sheet pan, vegetarian weekday meal that can be done in the oven or on the grill - your choice!

Basic Sauce Ingredients

  • Red, Yellow or Orange Peppers
  • 1 Onion
  • 1 Garlic head
  • Tomatoes (I prefer grape tomatoes)
  • 2 tsp Roasted Garlic & Red Pepper Seasoning (this can be subbed with Italian Seasoning or your personal favourite)

Optional Add-ons

  • Zucchini, Asparagus or anything else you would normally throw on the BBQ - toss it in!

Instructions

  1. Preheat oven to 450ºF. Cut all veggies roughly the same size (about 1") and arrange on parchment-lined sheet pan. Drizzle with olive oil and season with salt & pepper and other spices. Bake for 25-30 minutes until all veggies are cooked down, caramelized and soft. Cool for 5-10 minutes, then blend until you've reached the a thick sauce-like consistency. And that's it. PS: You can optionally add cream and heat it through to make it more of a rosé sauce (I prefer it without).
